Sweet Potato Fries

Sweet potatoes "fried" in the oven. They have the taste and texture of deep-fried ones, but are made in the oven. To achieve that fried texture, a small compromise is needed compared to the "cleaner" recipe I used until now - a little starch is required. Thanks to it, the potatoes develop a thin, crispy crust, something similar to tempura. Potatoes prepared this way are great with Parmesan and black pepper and go well alongside a burger.
Ingredients
1-2 sweet potatoes (about 200-250 g each)
1 tablespoon oil (olive)
2 tablespoons cold water
15 g starch (4 teaspoons)
salt
For Serving
1 tablespoon grated Parmesan
freshly ground black pepper
2 parsley sprigs
a few basil leaves

How to prepare sweet potato fries
- Peel the potatoes and cut them into sticks (like French fries).
- Bring salted water to a boil and when it's boiling, add the potatoes. Let it return to a boil (will take about 2 minutes) and from that moment cook them for 3 minutes.
- Drain the potatoes well and let them cool while you do the next step.
- In a wider bowl, mix the water with the oil, starch, and a little salt until you have something similar to a white sauce.
- Put the potatoes in this bowl and mix well so they're covered all over with the white "sauce".
- Arrange on a baking tray lined with parchment paper, spaced apart, not crowded together (no more than 2 potatoes will fit in a single baking tray!).
- Bake at 220°C (425°F) for 15-20 minutes, until lightly browned in spots and they develop a crispy crust (check a thicker one). If you cut them thicker, it could take 25-30 minutes until they're crispy. Keep an eye on them and check, it's safer that way.
- Transfer the potatoes to a plate. Mix the grated Parmesan with plenty of freshly ground black pepper. Sprinkle the Parmesan over the potatoes. Then sprinkle with the finely chopped herbs. Serve immediately.
