Very good for any type of grilling. Works with any type of meat.

Ideally it should be made of cast iron - a heavy pan with a thick bottom. When you buy it, pick it up and if it's heavy, it's good.

If you find a grill pan without a handle, just with 2 small handles made of the same material as the pan, or with a detachable handle, it's even better - then you can also use it in the oven. The one in the picture can only be used on the stovetop.

For juicy grilled dishes, use the technique from mixed grill.
