Recipe: Potato Cake (Pommes Anna)

When I started preparing it I didn't know what would come out, but it was excellent. It's a tasty and attractive side dish.

Ingredients

6 large potatoes
salt, pepper, dried thyme
3/4 pack butter

How to prepare potato cake (pommes anna)

  1. Slice the potatoes as thin as chips, as thin as you can, I used a mandoline. Melt the butter.
  2. Line a round pan, or a tart form, even a shallow pot, with parchment paper on both the bottom and sides. I used a 26cm diameter pan. Brush the parchment paper with butter everywhere, including the sides, and pour a few tablespoons on the bottom of the pan to pool a bit.
  3. Arrange the potato slices like in an apple tart, in a circle so the cake has a beautiful "face" when finished. Brush the potatoes with butter then generously sprinkle with salt, pepper, and thyme. You can add other seasonings you like.
  4. Continue like this: layer of potatoes, brush with butter, then seasonings until you finish the potatoes. Season the last layer only with salt.
  5. Wet a piece of parchment paper under the tap and squeeze it well, then cover the cake, making sure it's well sealed. Press down with your hands over the paper so the potato layers stick together. I also put a lid over the parchment paper to make sure everything is well sealed.
  6. Bake in the oven at 200C for about 45-50 minutes. Then remove the lid and paper and let it brown for 10 more minutes.
  7. After taking it out of the oven, flip it onto a serving plate, and it will look beautifully golden.
