Recipe: Baked New Potatoes with Peppers

I rarely get the chance to post in real time, but these potatoes have just come out of the oven. They smell amazing of green hot pepper and bay leaf.

Ingredients

500g new potatoes (about 5 medium potatoes)
1/2 red bell pepper (or kapia pepper)
1/2 dark green hot pepper
1/2 medium onion
1 garlic clove
1 ripe tomato (about 200g)
3 tablespoons olive oil
1 teaspoon dried oregano
1 bay leaf
salt, black pepper

How to prepare baked new potatoes with peppers

  1. Cut the tomato in half and grate it, holding it with the cut side against the grater, until only the skin remains in your hand. Put the tomato pulp in an oven-safe dish (I used a round dish with 25cm diameter).
  2. Cut the peppers into small cubes. Finely chop the onion. Slice the garlic.
  3. Wash the potatoes and scrub them with a metal sponge. Cut the potatoes into not-too-thick rounds.
  4. Mix the vegetables from step 2 with the potatoes. Sprinkle with salt, black pepper, and oregano. Mix. Add 2 tablespoons of oil and mix again.
  5. Pour the potatoes into the dish, over the tomato. Arrange the potatoes with your hand to sit as compact as possible in the dish. Sprinkle a little oregano on top and the rest of the oil.
  6. Pour 50ml water around the edge of the dish. Insert the bay leaf broken into a few pieces around the edge of the dish, in the liquid.
  7. Bake at 200°C for 1 hour.
