Pan-fried new potatoes: a rustic side dish you can prepare with the freshly available new potatoes.
Ingredients
600g small new potatoes
granulated garlic
curry
salt, pepper
4 tablespoons oil

How to prepare pan-fried new potatoes
- Wash the potatoes with a rough sponge. Put them to boil with water to cover them and 2 1/2 teaspoons salt. Boil for maximum 10 minutes (from when the water starts boiling), until a fork goes into them.
- Heat the oil in a wide pan (I used a 30cm one, so they all fit in one batch). Put the drained potatoes in the pan and stir a bit to coat them with oil.
- With the bottom of a jar or a potato masher, gently crush them so that some break apart while others more or less keep their shape (to have varied texture in the pan; the more crushed potatoes will be better because the flavors penetrate them better 😉 ).
- Season generously with salt and pepper, and garlic and curry to taste. Fry for 5 minutes on one side. Turn them over, season again, and fry for another 5 minutes on the other side, until they form a super crispy crust.
* instead of curry you can use any other seasoning you like with potatoes or even herbs, for example rosemary - Serve at the table directly from the pan, it looks very rustic.
