Recipe: Pan-Fried New Potatoes

Pan-fried new potatoes: a rustic side dish you can prepare with the freshly available new potatoes.

Ingredients

600g small new potatoes
granulated garlic
curry
salt, pepper
4 tablespoons oil

Servings: 2-3

How to prepare pan-fried new potatoes

  1. Wash the potatoes with a rough sponge. Put them to boil with water to cover them and 2 1/2 teaspoons salt. Boil for maximum 10 minutes (from when the water starts boiling), until a fork goes into them.
  2. Heat the oil in a wide pan (I used a 30cm one, so they all fit in one batch). Put the drained potatoes in the pan and stir a bit to coat them with oil.
  3. With the bottom of a jar or a potato masher, gently crush them so that some break apart while others more or less keep their shape (to have varied texture in the pan; the more crushed potatoes will be better because the flavors penetrate them better 😉 ).
  4. Season generously with salt and pepper, and garlic and curry to taste. Fry for 5 minutes on one side. Turn them over, season again, and fry for another 5 minutes on the other side, until they form a super crispy crust.
    * instead of curry you can use any other seasoning you like with potatoes or even herbs, for example rosemary
  5. Serve at the table directly from the pan, it looks very rustic.
