New Potato Salad

I made this for the first time to participate in a culinary competition, inspired by several recipes, and here's the result. I didn't win the competition but I ended up with a great salad recipe.
Ingredients
500 g small new potatoes
5 heaping tablespoons sour cream
1 teaspoon chopped dill
1 small bunch chopped parsley
1 garlic clove
2 heaping teaspoons mustard
green onion tops, chopped
150 g ham (preferably smoked), cubed
salt and pepper
How to prepare new potato salad
- I washed the potatoes well, scrubbed them with a stiff brush, cut them in half or quarters (depending on size) and boiled them in salted water. After 10 minutes of simmering on low heat, I drained them and let them cool.
- Then I prepared the dressing from: sour cream, mustard, parsley, dill, crushed garlic, and salt and pepper.
- I mixed the dressing with the potatoes, covered with plastic wrap, and refrigerated. Keep cold until serving so the flavors blend, at least 1 hour.
- Before serving, I sliced the green onion into rounds and fried the ham until crispy.
- Set aside a tablespoon each of fried ham and green onion for garnish, and mix the rest into the salad just before serving. Adjust salt and pepper to taste.
- Presentation: place the salad on lettuce leaves and sprinkle with the remaining ham and green onion. Enjoy!
