Recipe: Baked Octopus with Potatoes

Good morning and welcome back! The two weeks of vacation were long... and relaxing. Let's start the year with a baked octopus that I prepared for our New Year's Eve dinner.

PS. I'm not very chatty today, but it's understandable - it's Monday morning and a ton of work awaits me. But I'll slowly recover from the sluggishness 😉

Ingredients

1 kg octopus
5 potatoes
1 yellow onion
1 large tomato (in winter you can use 6 cherry cocktail tomatoes, they're the sweetest)
1 teaspoon homemade vegeta
1/2 teaspoon pepper
1/2 teaspoon turmeric
80 ml olive oil
150 ml water
1 tablespoon room temperature butter
a few sprigs of parsley
100 ml dry white wine
2 cloves garlic
salt

How to prepare baked octopus with potatoes

  1. Put the cleaned octopus to boil in hot water to which you've added 2 tablespoons of vinegar. Boil for only 20 minutes, just enough time to eliminate the slime.
  2. In an oven-safe dish, place the potatoes, tomatoes, and onion cut into rounds. Season with salt, pepper, turmeric, and vegeta and mix. Then pour the oil and water over them.
  3. Place the octopus on top of the vegetables. Cover the dish with aluminum foil and bake at 150°C (300°F) for 1 hour and a half.
  4. Remove the foil and keep the octopus on a plate until we finish the garnish.
  5. Over the vegetables in the dish, pour the wine mixed with finely chopped parsley and crushed garlic cloves. Add the butter. Put the dish on the stovetop over medium heat and when the contents start to boil, stir gently until the butter is completely melted. Then let it boil for about 2 more minutes. Remove the dish from heat and place the octopus on top. Serve immediately.
