Recipe: Baked Quinces and Apples

Simple dessert, no frills. Just baked fruit. If you buy local fruit, you don't even need to add honey, sugar, or cinnamon. I got mine from the Saturday farmers' market (where among other things I find arugula and Brussels sprouts grown near Cluj 🤤). These fruits were quite small - I didn't buy them for their looks but for their very concentrated aroma. Get used to smelling what you buy - the smell is a good indicator of taste.

Baked quinces are cherished memories from long ago, just like baked pumpkin or potato peels. It's an uncomplicated way to enjoy these wonderful fruits. I also use them as a room "air freshener", just like in the old days. I place quinces on a cabinet (because it's warmer up there) and in a few hours the house smells like... autumn. You can really notice it when you come in from outside.

Bake a whole tray, because IF you have some left over you can turn them into fruit yogurt (get inspired by this recipe to make yogurt with apples or quinces).

How to prepare baked quinces and apples

  1. Wash the fruit and place them in a baking pan.
  2. Bake at 180C until you see juice starting to burst out of them. At that point, poke them with a fork to check if they're soft all the way to the stem. Apples cook faster than quinces. For example, my small apples took 20 minutes, while equally small quinces took 30 minutes.
  3. They're good warm or at room temperature.
