Recipe: Banana Split

I don't know how much longer these warm autumn days will last, but I'm taking advantage of them to post the last ice cream recipe of the year: caramelized bananas served with vanilla ice cream.

Ingredients

3 bananas
50g butter
2 tablespoons pumpkin seed oil (or walnut oil)
3 tablespoons brown sugar
4-5 tablespoons rum (or sweet oloroso sherry)
vanilla ice cream
cinnamon

Servings: 3

How to prepare banana split

  1. Melt the butter with 1 tablespoon of pumpkin seed oil over low heat.
  2. Add the sugar and stir until it's almost melted and the mixture starts to bubble.
  3. Add the rum and stir constantly until all the sugar melts.
  4. Finish the sauce with 1 tablespoon of pumpkin seed oil. Remove the pan from heat.
  5. Add the bananas cut in half lengthwise to the sauce. Spoon sauce over them to coat well. Let them sit for 10 minutes.
  6. Place 2 banana slices on each plate. Place 2-3 scoops of ice cream between them and then pour sauce on top. Sprinkle with cinnamon.
