I don't know how much longer these warm autumn days will last, but I'm taking advantage of them to post the last ice cream recipe of the year: caramelized bananas served with vanilla ice cream.
Ingredients
3 bananas
50g butter
2 tablespoons pumpkin seed oil (or walnut oil)
3 tablespoons brown sugar
4-5 tablespoons rum (or sweet oloroso sherry)
vanilla ice cream
cinnamon

How to prepare banana split
- Melt the butter with 1 tablespoon of pumpkin seed oil over low heat.
- Add the sugar and stir until it's almost melted and the mixture starts to bubble.
- Add the rum and stir constantly until all the sugar melts.
- Finish the sauce with 1 tablespoon of pumpkin seed oil. Remove the pan from heat.
- Add the bananas cut in half lengthwise to the sauce. Spoon sauce over them to coat well. Let them sit for 10 minutes.
- Place 2 banana slices on each plate. Place 2-3 scoops of ice cream between them and then pour sauce on top. Sprinkle with cinnamon.
