Blueberry Crumble Bars

Since we have good local fruits, not imported from who knows what country, here's another seasonal recipe, blueberry crumble bars.
I must confess with embarrassment that since Friday I wanted to prepare a blueberry dessert for you to have for the weekend, but it was a small disaster. The first attempt was with an American recipe and I have a strong feeling that the difference between their ingredients and ours was the problem. I promise to study it more and come back because it's a highly praised little cake 😉
Ingredients
400g flour
300g sugar
1 teaspoon baking powder
1 pinch of salt
1 egg
225g cold butter
400g blueberries
4 heaping teaspoons cornstarch
How to prepare blueberry crumble bars
- In a food processor, pulse the flour with 200g sugar, baking powder, and salt a few times.
- Add the egg and butter cut into cubes. Pulse again until everything becomes like breadcrumbs.
- In a 20cm x 30cm (8x12 inch) pan well-greased with butter, pour half of the dough. Place a bag over the dough and press with the bottom of a glass to level the dough.
- Mix the blueberries with the cornstarch and the remaining 100g sugar.
- Pour the blueberries over the dough in the pan.
- Sprinkle the remaining dough over the blueberries.
- Bake at 190°C (375°F) for 45 minutes, until the crumbs on top are golden.
- Let it cool completely and cut into squares. Store in the refrigerator.
