Braised New Potatoes

Today I'll leave you in my mother's hands to show you how she makes braised new potatoes. The truth is this dish can be made with any type of potato, but we make it more often during this time to take advantage of the new potatoes.
Ingredients
4 new potatoes (about 700g)
1 small zucchini
2 small ripe tomatoes
1 small onion
1/3 red bell pepper
2 garlic cloves
3 slices of kaiser (smoked bacon)
50ml tomato paste
1 tablespoon oil
salt, pepper
Servings: 2-3
How to prepare braised new potatoes
- Cut the kaiser into strips. Fry it in a tablespoon of oil until golden and it has released some of its fat. Remove from the pot.
- In the remaining fat, add the finely chopped onion and diced pepper. Sauté on low heat until very soft (about 10 minutes). Add the crushed garlic and sauté for another 1 minute.
- Put the kaiser back in the pot. Arrange on top the peeled potatoes cut into rounds (not too thick, but not too thin either; around 4-5mm). Sprinkle with salt and pepper as you arrange them in the pot. If you like, you can also add some chopped dill. On top of them, put a layer of zucchini slices cut as thin as the potatoes. Sprinkle salt on the zucchini too. On top, arrange tomato slices and sprinkle with salt.
- Pour the tomato paste and 100ml water along the edge of the pot (you don't need more liquid, the zucchini and tomatoes will release enough juice). Shake the pot a bit to settle the contents.
- Bring to a boil and put the lid on. Turn the heat to low and braise for about 20 minutes. About every 5 minutes, shake the pot so the food doesn't stick to the bottom. Check that the potatoes are cooked and only then turn off the heat.
- Let it rest with the lid on for at least 15 minutes. Serve warm, sprinkled with parsley.
