New Potatoes with Salt and Vinegar

500 g new potatoes (small, walnut-sized)
3-4 tablespoons vinegar (a milder vinegar; I used rice vinegar)
1/2 teaspoon coarse sea salt
3 tablespoons olive oil

How to prepare new potatoes with salt and vinegar
- Scrub the potatoes with coarse salt and a metal sponge. Rinse well. Boil in salted water until done - a fork should easily pierce them. Drain.
- Arrange the potatoes in a large baking dish (for larger quantities, you can use a baking tray) next to each other without overlapping. Using the bottom of a glass, flatten the potatoes to about finger thickness. It's okay if some break apart.
- Drizzle the potatoes with oil. Brush with 2 tablespoons of vinegar. Sprinkle with coarse salt.
- Bake at 220°C for 20 minutes.
- Carefully flip the potatoes. Brush this side with the remaining vinegar (taste a piece and estimate if you want 1 or 2 more tablespoons of vinegar). Sprinkle with a bit more coarse salt.
- Bake for another 10 minutes. The potatoes should have a crispy crust at the end.
- Transfer to a platter and sprinkle with plenty of chopped parsley. Serve immediately alongside a steak or roast chicken.
