Carrots with Yogurt

A Turkish-inspired salad appetizer.
Ingredients
250 g carrots (I used new carrots)
25 g walnuts
1 garlic clove
120 g Greek yogurt
1 sprig dill
2 tablespoons olive oil
salt
How to prepare carrots with yogurt
- Grate the carrots on the large grater.
- Heat the oil in a wide pan and add the carrots. Set heat to medium-low and sauté the carrots, stirring frequently for about 10 minutes, until softened. Sprinkle a little salt on them. Check that they're done but still slightly al dente.
- Add the knife-chopped walnuts and sauté everything for 2 more minutes.
- Add the garlic and stir together for 1 more minute.
- Transfer the carrots to a bowl and mix with the yogurt and finely chopped dill. Adjust salt to taste. Great with Lebanese flatbread or rye bread.
