Carrot Salad with Yogurt, Raisins and Walnut Oil

Oh, this salad... it has it all.
Ingredients
150g carrots
5-8 mint leaves
100g Greek yogurt
1 level teaspoon Garam Masala (I used Fuchs brand)
1/4 teaspoon turmeric
1 tablespoon golden raisins (soaked in advance in hot water)
1 green onion
2 tablespoons walnut oil
salt, black pepper

How to prepare carrot salad with yogurt, raisins and walnut oil
- Grate the carrots on the small grater and sprinkle with a little salt. Massage for 1 minute to soften them a bit. Mix with finely chopped mint.
- Mix the yogurt with a little salt, Garam Masala, turmeric, freshly ground black pepper, 1 tablespoon of walnut oil and 2 tablespoons of water until creamy and uniformly colored. Adjust for salt.
- Pour the yogurt over the carrots and mix well. Spread the salad in an even layer on a platter (or in a serving bowl).
- Drain the raisins from the soaking water and mix with the green onion sliced into rounds, a little salt and 1 tablespoon of walnut oil. Sprinkle over the carrot salad. Sprinkle a little more coarse salt (fleur de sel or Maldon salt flakes).
- Serve with flatbread, toasted bread or grilled pita (homemade following the recipe here, steps 1-3).
