Recipe: Simple Carrot Salad

Little orange salad. For days when you want more simplicity in your life.

At brunch, serve it alongside toasted baguette slices and a pile of soft butter sprinkled with fleur de sel. Replace the butter with creamy goat cheese, add a glass of white wine and invite your friends for lunch. For dinner, it goes well with any grilled meat.

Ingredients

200g carrots
1/2 tablespoon lemon juice
1 tablespoon olive oil
1/2 bunch parsley
1/8 teaspoon ground cumin
1/4 teaspoon ground coriander
zest from 1/4 small organic lemon
salt

Servings: 1-2

How to prepare simple carrot salad

  1. Grate the carrots on the small grater (I used this grating robot). Sprinkle with salt and massage with your fingers for about 1 minute, until you feel the carrots are more moist.
  2. Add the coriander and cumin and massage again for about 30 seconds.
  3. Add the lemon juice, lemon zest and oil. Mix. Taste for salt.
  4. Add the finely chopped parsley and mix well. Let it sit for 15-30 minutes at room temperature. If you keep it longer (up to 3-4 hours), put it in the refrigerator.
