Simple Carrot Salad

Little orange salad. For days when you want more simplicity in your life.
At brunch, serve it alongside toasted baguette slices and a pile of soft butter sprinkled with fleur de sel. Replace the butter with creamy goat cheese, add a glass of white wine and invite your friends for lunch. For dinner, it goes well with any grilled meat.
Ingredients
200g carrots
1/2 tablespoon lemon juice
1 tablespoon olive oil
1/2 bunch parsley
1/8 teaspoon ground cumin
1/4 teaspoon ground coriander
zest from 1/4 small organic lemon
salt

How to prepare simple carrot salad
- Grate the carrots on the small grater (I used this grating robot). Sprinkle with salt and massage with your fingers for about 1 minute, until you feel the carrots are more moist.
- Add the coriander and cumin and massage again for about 30 seconds.
- Add the lemon juice, lemon zest and oil. Mix. Taste for salt.
- Add the finely chopped parsley and mix well. Let it sit for 15-30 minutes at room temperature. If you keep it longer (up to 3-4 hours), put it in the refrigerator.
