Recipe: Cheese Cake with Raisins

The simplest cheese cake I've ever made. It has no crust, no flour, it comes out fluffy and tasty.

Ingredients

500g fresh cheese (well drained)
200g mascarpone cheese
3 eggs
100g sugar
2 packets vanilla sugar
100g raisins
30g semolina
1/2 lemon
1 pinch salt
a little butter and flour for the pan

How to prepare cheese cake with raisins

  1. Soak the raisins 30 minutes ahead in rum, sherry or warm water.
  2. Separate the egg whites from the yolks. Beat the egg yolks with a mixer together with the sugar and vanilla sugar until it becomes creamy.
  3. Add the cheeses and mix for another minute.
  4. Add the lemon zest and juice, the drained raisins, semolina and salt. Mix.
  5. Beat the egg whites until stiff peaks form. Fold into the cheese mixture in three batches, using a whisk to mix gently.
  6. Grease a 20 x 24 cm pan with butter. Dust with flour or crushed biscuits.
  7. Pour the mixture into the pan, level it, tap the pan on the table to settle evenly. Bake at 170°C for 50 minutes, until lightly golden on top. Turn off the oven and leave it inside for 10 minutes. Remove the cake from the oven and let it cool completely, then it can be sliced. When serving, you can dust with powdered sugar.
