Chicken Liver Pate with Pistachios

I usually prepare this recipe for the holidays. But now we have a special guest, so I added it to the menu. The only change I made to the original recipe was replacing walnuts with pistachios. They pair so well that over time I kept increasing the amount of pistachios. And don't skip the rosemary - it pairs perfectly with liver.
The pate is very aromatic and the liver flavor is so delicate that even Radu, who hates liver, eats it with pleasure. If you have picky eaters at home, you can try this recipe - there's a good chance they'll like it... they might not even realize what it is. 😉
Ingredients
1 kg chicken livers
2 sprigs rosemary
4-5 sprigs thyme
2 bay leaves
2-3 garlic cloves
200g butter
2 medium onions
1 packet unflavored gelatin (10g)
5 heaping tablespoons ground pistachios
3 tablespoons cognac
salt, pepper
How to prepare chicken liver pate with pistachios
- Melt the butter in a pot, then add the finely chopped onions. Let them soften.
- Add the livers, whole thyme and rosemary sprigs, and bay leaves. Fry while stirring occasionally so the livers cook evenly... about 15 minutes. In the last 5 minutes, add the crushed garlic.
- Remove the aromatic herbs from the pot.
- Pour the entire contents of the pot into a food processor and blend until you get a smooth paste.
- Dissolve the gelatin in 2 tablespoons of cold water.
- Add salt and pepper to taste to the liver paste. Add the gelatin, 3 tablespoons of ground pistachios, and the cognac, and mix well.
- Line a mold (I used a loaf pan) with plastic wrap (let it hang over the edges).
* you can also use smaller pastry molds - Pour the liver paste into the mold and sprinkle the remaining pistachios on top. Fold the plastic wrap edges over the paste and add a layer of aluminum foil so the contents are well sealed to prevent oxidation. Refrigerate overnight.
- The next day it can be sliced. Serve on toasted bread rubbed with garlic. Or with a radish and cucumber salad.
