Recipe: Ham Spread (Pasta de Sunca)

I found this special Easter recipe on the vinul.ro website and could not wait to try it, as it is very similar to my crackling spread.

Ingredients

300 g smoked ham (or smoked ham hock)
2 bay leaves
2 eggs
1 green onion stalk
1 small dried onion (about 25 g)
2 tablespoons mustard
25 g melted butter

How to prepare ham spread (pasta de sunca)

  1. Cut the ham into smaller pieces so it cooks faster. The ham should be fairly fatty, about 1/3 fat and the rest meat, to achieve a creamy spread.
  2. Put the ham to boil with the bay leaves. Let it cook for about 45 minutes, until the ham is soft. In the last 10 minutes, add the eggs to the pot.
  3. Put the ham, onion, and eggs in a food processor (or grind through a meat grinder). Blend well until everything becomes a paste.
  4. Put the spread in a bowl and add the mustard, butter, and season with salt and pepper. Refrigerate for at least 1 hour. Serve on toasted bread with radishes.
