Recipe: Chicken Soup with Noodles

I've always had an obsession with chicken soup. It never came out clear and I didn't know where I went wrong. It was tasty, but I didn't like that I couldn't see the bottom of the plate.

I would go home and ask my mother what I was doing wrong.
She would ask me: "Did you cook the chicken in cold water"?
Me: "No".
I would make the soup again with cold water and again it would come out murky.
Back to my mom, and she would ask: "Did you skim the foam?"
Me: "Yes, of course".
Mom: "Did you strain the soup in the end?"
Me: "Nooo"
Mom: "But how did you remove the meat from the soup?"
Me: "With the skimmer, of course"
Mom: "That's not right, you have to strain it"
Me: "OK, I'll do that too; why didn't I think of this?"
The soup came out murky once more...
Finally, I got a cooking book by Sanda Marin and read about making soup. I was convinced that the secret of clear soup was well kept by perfect housewives and that I would never find it out. Fortunately, I found the answer to my problem in this book: cooking over low heat. That's where I was going wrong - I cooked it over medium or high heat and it didn't matter if I skimmed or strained the soup. My mother's advice was good, but not enough for my experience at that point. Because all this happened a long time ago; now I know the recipe for a perfectly clear soup. 😋

I only make chicken soup with free-range chicken. Luckily, my grandmother raises the best chickens. The meat only smells of vegetables - it's the smell of the food my grandmother spoils them with (vegetable peels, greens from the garden, and ground corn mixed with cheese). What I like most in the soup is the celery, so I put quite a large amount. However, I don't particularly like onion in this soup - I find it makes it too sweet. I prefer to add a piece of green bell pepper.

You'll love my chicken soup made over low heat. I like to call it liquid gold 😉

Ingredients

1 free-range chicken (about 2 kg)
300g celery root
100g parsley root
2 large carrots
1 piece of light green bell pepper
a few sprigs of parsley
homemade noodles (or vermicelli)
salt, peppercorns
a little chopped parsley for serving

How to prepare chicken soup with noodles

  1. Wash the well-cleaned chicken in cold water. Cut it into pieces. If you wish, you can cover it with boiling water and let it sit for 15 minutes, then wash it again with cold water. This step will reduce the foam.
  2. Put the chicken in a large pot and cover with cold water (about 4-5 liters of water). Cook over low heat.
    * if we cook the chicken in cold water, the soup will be better; if on the contrary we want the meat to be tastier, we put it in hot water.
  3. Skim the soup with a slotted spoon until no more foam forms on top. For me it took about 1 hour, checking every 10 minutes to see if it needs skimming. When you see that no more foam forms, wipe the edge of the pot of hardened foam with a damp paper towel.
  4. Clean and wash the vegetables, then cut them into large pieces. Add them to the soup along with 2 teaspoons of salt and 1/2 teaspoon of black peppercorns and continue simmering over low heat, just enough to gently bubble. Now you can put the lid on the pot so the soup doesn't reduce too much. Simmer for another 2 hours.
    * don't let the soup boil vigorously - it will become murky 😋
  5. Place a strainer (preferably lined with cheesecloth) over an empty pot and strain the soup.
    * if you strain the soup, it will be even clearer; the boiled vegetables and chicken meat will remain in the strainer and you can use them for preparing other dishes.
  6. Meanwhile, cook the noodles separately. Drain them and add them to the pot of soup, bring to a boil once more, checking for salt.
    * I cook the noodles separately so they don't release their starch into the soup and make it murky.
  7. Serve sprinkled with parsley and pepper. I also like chicken soup with radishes.
