Recipe: Chicken Sour Soup

A delight for the taste buds and for the eyes. And it's very easy to prepare!

This chicken sour soup recipe is traditional from Oltenia. Rich in vegetables, easy to prepare, and finished with egg ribbons, it's the perfect soup to make during the week.

Who wants a serving of chicken sour soup?

Ingredients

1 kg chicken meat (I used 4 wings and the rest giblets)
1 carrot
1 onion
1 parsley root
1 slice celery root (about 50 g)
1/2 red bell pepper
150 ml tomato paste (or 100 ml passata)
1 ripe tomato, peeled (can be canned)
1 egg
3 sprigs lovage
3 tablespoons lemon juice (or bors; for souring)
a little oil
salt

How to prepare chicken sour soup

  1. Grate the carrot, celery, and parsley root on a coarse grater. Finely chop the onion and bell pepper. Sauté all these vegetables in 2-3 tablespoons of hot oil until softened (about 10 minutes), stirring frequently.
  2. Add the meat and 1.5 L of cold water. Bring to a boil, then skim the foam well during the first 15 minutes of cooking.
  3. To the skimmed soup, add the tomato paste, the tomato mashed with a fork, and 2 teaspoons of salt. Continue cooking the soup over medium heat for another 45 minutes (until the meat is well cooked). If it reduces too quickly, put the lid on the pot.
  4. Beat the egg and pour it into the soup in a thin stream to form ribbons. Sour the soup with lemon juice to taste (or bors) and adjust salt.
  5. Add the finely chopped lovage to the soup.
  6. Serve the chicken sour soup plain or with sour cream.
