A vegan sandwich perfect for school or work lunch boxes. This was the first vegetarian dish that received a 10 out of 10 from Radu, which says something, considering he can't go a day without meat. Usually vegetarian dishes, even if they're good, get at most a 9 from him because they don't have meat. That's discrimination, isn't it?
Ingredients
400g boiled chickpeas
a handful of black olives
1/2 lemon
a few sprigs of parsley
a few sprigs of cilantro
1/2 red onion
salt, pepper
2-3 tablespoons olive oil
3 roasted red peppers
lettuce
5-6 bread rolls
How to prepare chickpea and roasted pepper sandwich
- Cut 1 1/2 roasted peppers into small pieces, and cut the rest into strips that we'll use to garnish the sandwiches. Here you can find the technique for roasting and peeling peppers.
- Mix the boiled chickpeas with the sliced olives, chopped peppers, finely chopped herbs and onion. Drizzle with lemon juice and season with salt and pepper to taste. Add the oil and mix.
- Cut the rolls in half and remove the soft center from both parts.
- Place a few large lettuce leaves on one half of the roll.
- On top, place about 3 tablespoons of the chickpea salad and then garnish with a few strips of roasted pepper.
- Cover with the other half of the roll and serve.
