I finally found sesame paste at Cora and managed to make an excellent homemade hummus, as the store-bought one did not impress me very much. It is a very healthy dish, but it has lots of calories, so consume it in moderation. 😉
Ingredients
2 cups cooked chickpeas
2 tablespoons sesame paste (tahini)
juice of 1 lemon
2 garlic cloves
3 tablespoons olive oil
salt
For serving
olive oil
chili
sesame seeds
chopped parsley
How to prepare homemade hummus
- After cooking the chickpeas, save one cup of the cooking water.
- In a food processor, blend the cooked chickpeas well, then let it cool completely.
- Add the remaining ingredients and blend until finely processed, then slowly pour in the water until you achieve your desired hummus texture. I used one cup of water.
- Let the processor run for another minute to get a very smooth paste.
- Serving the hummus: place the hummus on a plate and spread it with the back of a spoon, then drizzle with olive oil, chili (or paprika), sesame seeds, and sprinkle with chopped parsley (or cilantro). Serve with pita bread.
- Store in a jar in the refrigerator. It should be consumed within a week.
