Recipe: Homemade Hummus

I finally found sesame paste at Cora and managed to make an excellent homemade hummus, as the store-bought one did not impress me very much. It is a very healthy dish, but it has lots of calories, so consume it in moderation. 😉

Ingredients

2 cups cooked chickpeas
2 tablespoons sesame paste (tahini)
juice of 1 lemon
2 garlic cloves
3 tablespoons olive oil
salt

For serving

olive oil
chili
sesame seeds
chopped parsley

How to prepare homemade hummus

  1. After cooking the chickpeas, save one cup of the cooking water.
  2. In a food processor, blend the cooked chickpeas well, then let it cool completely.
  3. Add the remaining ingredients and blend until finely processed, then slowly pour in the water until you achieve your desired hummus texture. I used one cup of water.
  4. Let the processor run for another minute to get a very smooth paste.
  5. Serving the hummus: place the hummus on a plate and spread it with the back of a spoon, then drizzle with olive oil, chili (or paprika), sesame seeds, and sprinkle with chopped parsley (or cilantro). Serve with pita bread.
  6. Store in a jar in the refrigerator. It should be consumed within a week.
