Chocolate Rice Pudding

Judging by the weather outside, I think we can declare the hot chocolate season over. So, in the spirit of zerowaste, I wanted to finish the instant hot chocolate powder at the bottom of the jar in a memorable way. I added it to a rice pudding with vanilla and honey made risotto-style. Absolutely delicious, absolutely memorable. Bye bye hot chocolate, see you next winter. Hello, greens!
Ingredients
1 cup round grain rice (200 g; Camolino rice)
1 l milk
200 ml cooking cream (15%-20% fat)
1 teaspoon vanilla paste (or the seeds from 1/2 vanilla pod)
2 generous tablespoons honey (100 g)
1/2 teaspoon salt
20 g butter
50 g golden raisins (optional)
3 tablespoons instant hot chocolate powder (store-bought or homemade; if store-bought, check the label to ensure it is starch-free)

How to prepare chocolate rice pudding
- Melt the butter in a wide pot and then add the rice and salt. Toast the rice over medium heat for 2-3 minutes, stirring constantly, until it becomes translucent and the butter smells slightly sweet.
- Meanwhile, heat the milk. Add 2 ladles of milk over the rice. Turn the heat to low and stir constantly but slowly, until the milk is almost completely absorbed.
- Continue adding one ladle of milk at a time, stir until absorbed, then add more milk... continue like this until you finish the milk.
- Continue adding the hot cream in the same manner, 1 ladle at a time, until you finish it. This entire process will take about 30 minutes (for rice with a cooking time of 17-18 minutes on the package).
- Toward the end, taste the rice - it should be completely cooked, but not soft and disintegrated, you should still feel a slightly chewy grain. If it is not cooked, continue adding hot milk in the same manner until done.
- Add the honey, vanilla, and raisins (if desired). Mix well. Cover the pot with a towel and then with a lid. Let it sit like this for 10 minutes.
- While the rice is resting, prepare deeper dessert plates or wide bowls like this: put the chocolate powder in a small tea strainer and dust the bottom of the plates until completely covered (have a generous layer - it will melt when you add the hot rice).
- Divide the hot rice pudding over the chocolate layer. Dust the top of the pudding with chocolate as well. Serve immediately. The pudding is also good without chocolate, just with raisins. It retains its creaminess after cooling.
