Recipe: Filled Nest Rolls

Nest rolls with various fillings will please everyone in the family. Some will prefer jam, others cheese. You don't have to limit yourself to the ones I used - you can make poppy seed, walnut, or dried fruit fillings... If you don't add sugar to the dough, you can make a savory version with fillings like sausage, ragu, or cabbage...

Ingredients

450g all-purpose flour
1 packet instant yeast (7g)
250ml warm milk
1 egg yolk
60g butter at room temperature + 1 tablespoon melted butter
4 tablespoons sugar
1 pinch of salt

Fillings

Cheese filling (for 15 rolls):
150g cottage cheese
1 egg yolk
3 tablespoons heavy cream
2-3 tablespoons sugar

Jam or preserves of any kind (I used plum jam and sour cherry preserves)

Topping

1 tablespoon melted butter
3 tablespoons sugar
1 heaping tablespoon flour
1 level teaspoon cinnamon

Yield: 15 pieces

How to prepare filled nest rolls

  1. For the dough: Cream the 60g butter with sugar. Add the egg yolk and mix well. I put this mixture in a bread machine, then added the warm milk, yeast, flour, and salt at the end. I set the machine to the kneading and rising program. If you don't have a bread machine, knead all ingredients by hand until the dough is elastic and no longer sticks to your hands. Let rise for 1-2 hours in a covered bowl, placed in a warm spot, until the dough doubles in volume.
  2. Meanwhile, I prepared the cheese filling and the topping. For the cheese filling, I mixed all ingredients together. Same for the topping - I mixed all ingredients until I got a breadcrumb-like texture.
  3. I lined a baking pan (approximately 22 x 33 cm) with parchment paper.
  4. I divided the dough into 15 pieces, as equal as possible. I shaped each into a ball and placed them in the pan about 1-2 cm apart. I brushed them with melted butter. I placed the pan inside a plastic bag and let the balls rise in a warm place for another 30 minutes.
  5. I then made a crater in the center of each ball (easiest to do with your fingers, but you can also use the back of a teaspoon). The bigger the crater, the more filling you can add 😉 You need to fit at least 1 teaspoon of filling in each crater.
  6. I put 1 generous teaspoon of filling in each crater. I alternated the fillings in rows (one row with sour cherry preserves, one row with cheese, then another row with plum jam, and so on...)
    * Note: the cheese filling will be enough for 15 rolls!
  7. I sprinkled the topping on the edges of the rolls and baked in a preheated oven at 190°C (375°F) for 35 minutes.
