So crispy and delicious... just like at Costinesti... what great times 😊 They go well as a snack with beer or as an appetizer sprinkled with lemon juice or a little garlic sauce.
Ingredients
1 kg sprat (or anchovies)
1 plate of flour
pepper
salt
milk
plenty of oil for frying
How to prepare fried sprat (or anchovies)
- Whether the fish are frozen or not, put them in milk and leave them there for at least 15 minutes or until thawed. Then wash them in several changes of water.
- Coat the fish in flour mixed with plenty of pepper. Shake off the excess flour well.
- In a deep frying pan, heat plenty of oil. Put a small fish in the oil and if it sizzles, the oil is hot enough.
- Fry the fish in oil for about 3 minutes. Fry in 2-3 batches so there are not too many in the pan and the oil temperature does not drop.
- Remove the fish onto paper towels to absorb the excess oil.
- When all the fish are fried, put them back in the pan to fry for 1 more minute, now you can put them all in at once. This double frying will make them crispier.
- Remove them again onto paper towels to absorb the excess fat, then sprinkle salt over them.
- Serve sprinkled with lemon or with garlic sauce.
