I ate something like this in June at my cousin Dana's wedding (off topic: a lovely wedding organized in a summer garden, with a Swedish buffet and a huge grill in the center, good music in the background and a very relaxed atmosphere - it felt like the whole family went for a picnic, without much fuss but everything in good taste; anyway a different kind of wedding, unlike the rest of the boring weddings I have been to, except mine of course 😋) and I have been thinking about it ever since. It was served as a warm appetizer, only the fish was breaded and the sauce was served next to it. But I already had my share of deep-fried food this week, so I prepared the fish on the grill.
Ingredients
2 fish fillets (mine was hake)
Dill Sauce
50g butter
1 heaping tablespoon flour
250 ml hot milk
1 tablespoon chopped dill
salt, pepper

How to prepare grilled fish in dill sauce
- Salt and pepper the fish fillets and place them on the grill, about 2-3 minutes on each side. When done, break the fish into smaller pieces with a fork.
* I portioned the fish fillets to fit in my grill pan which is quite small, resulting in 4 pieces like those in the photo - In a pot, melt the butter over medium-low heat, then add the flour. Stir with a whisk for about 1 minute until the flour browns slightly (it should be golden, do not let it get too dark!). The sauce will now have a thick paste consistency.
- Slowly pour the milk over the sauce, like making mayonnaise, and stir continuously with the whisk until you finish all the milk.
* the milk must be hot so lumps do not form.
* if this is your first attempt and the sauce has lumps, do not panic - there is a solution for that too: strain it through a sieve and you will get the smoothest sauce 😉 - Add the dill to the sauce, season with salt and pepper, and continue stirring until you get a creamy sauce.
- Add the fish pieces to the sauce, stir gently and remove from heat. Serve warm.
