I'll tell you honestly that I don't have dilemmas like "what should I cook today?" I always have plans, curiosities, new ideas to test. And I have a kind of culinary ADHD, my cravings jump from one dish to another, from one cuisine to another like a yoyo. Good ideas, bad ideas, they'll slowly sift out. For example yesterday... I had planned to make gizzard skewers... and then I thought about the tomato sauce with butter from Iskender kebab and how good it would be now... but I don't have lamb... what if I paired these two ideas?!

Ingredients

1/2 portion confit gizzards
pepper, chili

Tomato Sauce

1 heaping teaspoon butter
1/2 tablespoon fat from the confit gizzards
1 heaping teaspoon tomato paste
1 small garlic clove
1/8 teaspoon ground cumin
chili flakes
salt, black pepper

For serving

1 grilled pita
1 tablespoon yogurt

How to prepare gizzard skewers iskender kebab style

  1. Remove the gizzards from the fat and thread them onto skewers (I got 3 skewers; enough for one portion). Sprinkle with freshly ground black pepper and chili if desired.
  2. Heat a grill pan over maximum heat for 5 minutes, without adding any fat. Place the skewers in the pan at a distance from each other and fry on both sides until browned. The gizzards are already cooked, you just need to let them brown nicely.
  3. While the gizzards are cooking, melt the butter and fat in a small pan. Add the tomato paste and sauté for 30 seconds. Add the crushed garlic and sauté for 30 seconds. Add the spices (cumin, freshly ground black pepper, chili if you want it spicy) and stir to dissolve in the fat.
  4. Add 2 tablespoons of water and salt. Mix well. You'll see now that the tomato paste will dissolve and a sauce will form. When the sauce comes to a boil, remove the pan from heat.
  5. When the skewers are ready, brush them with tomato sauce all over. Place them on the pita. Pour the sauce on top. Put a generous tablespoon of yogurt (Greek or sheep's milk) on the side. Serve immediately.
    * prepare the pitas ahead of time; you'll get 6 pitas; keep them covered
