And this year's winners in the Easter appetizer category are these scuffins (muffins made with a dough similar to scones)! They're so simple to make... just quickly mix with the end of a wooden spoon. They may not be the prettiest muffins, but they make up for it in taste. Cora from England sent me the recipe, and the first time I made them, the name "muffins" threw me off as I expected a thinner batter. When I didn't get it, I quickly added some milk at the end and it was a disaster - they turned out sticky. I got more clarification from Cora that the dough is like scones and it all clicked. Aha... those English things that are delicious but so ugly I hadn't posted any recipes with them until now!!! But I remade them (because I had tasted the sticky batch) and I'm sharing the recipe with you because they're amazing. They can be reheated, they're fluffy even the next day. They're flavored with rosemary. They're made with olive oil. I can't wait for you to try them!
Ingredients
300g flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine salt
1/4 bunch parsley
1 small sprig rosemary
100ml extra virgin olive oil
230ml yogurt
200g aged goat cheese

How to prepare goat cheese muffins
- Sift the flour together with the baking powder, baking soda and salt.
- Add the finely chopped parsley and rosemary leaves. Mix with the end of a wooden spoon to distribute evenly.
- Add the oil over the entire surface and mix again with the wooden spoon end. The flour will look like breadcrumbs now.
- Add the yogurt and mix with the wooden spoon end just until all the flour is absorbed. You don't need to homogenize the dough, just make sure no flour is visible.
- Add the cheese, finely chopped with a knife. Mix briefly, just until the cheese is distributed.
- Portion the dough into muffin tins lined with paper. The dough is quite firm and sticky, so the easiest way to portion it is with an ice cream scoop.
- Bake at 200°C for approximately 20 minutes (until risen and golden).
