Yogurt and Orange Muffins
I made these yesterday for my work lunch box. Actually, the recipe is for a yogurt cake, but instead of baking it in a large pan, I baked the batter in individual muffin molds so it would be easier to take with me.
Ingredients
240g yogurt
180g flour
1 teaspoon baking powder
125g sugar
50ml oil
3 eggs
1 teaspoon vanilla extract
a pinch of salt
zest of 1 orange
juice of 2 oranges
a little oil or butter for greasing the molds
Servings: 12 pieces
How to prepare yogurt and orange muffins
- Mix the yogurt with flour, baking powder and salt. I used a mixer.
- Incorporate the sugar, then the oil, then the eggs one at a time.
- At the end, add the orange zest and vanilla extract. The resulting batter is soft, almost like pancake batter.
- I placed paper liners in a muffin pan and greased them well (including the sides). I poured batter into each liner using a ketchup bottle, it's easier for me that way. I didn't fill the molds completely because the muffins rise a bit while baking.
- Bake at 180C for 35 minutes. Don't open the oven during this time!!!
- I took them out of the oven, let them cool for 10 minutes, then scored each muffin in an X shape on top and poured orange juice over them. When the juice was absorbed, I poured more to soak them well.
- Store in a bag and they're better the next day, the flavors are stronger.
