Sweet Bread Rolls with Vanilla Sauce

When hosting several guests, these fluffy sweet bread rolls served with vanilla sauce and sweet white wine are a great idea. First, because vanilla appeals to most people. And then, the rolls bake in a muffin tin, which is very convenient - you can make several at once.
And even if you don't have a muffin tin, you can use any other pan (round or rectangular) where you place the dough balls close together, slightly crowded, and they will rise just as nicely.
I got this recipe from Slovenia, where they're called "buhteljni". Students from the School of Catering and Tourism in Maribor prepared this dessert for us during a wine tasting. They hit the spot perfectly!
Ingredients
Dough
250g all-purpose flour (BL55)
150ml warm milk
2 egg yolks
10g fresh yeast
35g sugar (including 1 packet vanilla sugar)
55g butter (at room temperature)
zest of 1/4 lemon
1 pinch salt
Vanilla Sauce
500ml milk
100g sugar
4 egg yolks
20g cornstarch
1 vanilla pod (or vanilla extract)

How to prepare sweet bread rolls with vanilla sauce
- Dissolve the yeast in 50ml warm milk with a pinch of sugar. Leave in a warm place until foamy (about 15 minutes).
- Knead an elastic dough from all the dough ingredients (except the butter). I kneaded mine for one cycle in a bread machine.
- Rub the butter a bit to make it creamy, then start incorporating it gradually into the dough as follows: first, grease the bowl with 1/3 of the butter and knead the dough by hand until all the butter is absorbed. Then add a little butter at a time while kneading until it's all incorporated. This will take about 20 minutes. You'll get an elastic, soft, and glossy dough that's not sticky.
- Let the dough rise in a warm place for 1.5 hours. Allow it to double in volume.
- Cut the dough into 6 equal pieces (about 60-70g each is ideal for a portion; you can make them smaller if you want mini rolls) and shape into balls, tucking the edges underneath. Place the balls in a muffin tin dusted with flour. Put the tin in a bag and let the rolls rise in a warm place for 30 minutes.
- Bake the rolls at 180°C for 15-20 minutes, until golden on top.
- Prepare the vanilla sauce following these instructions (the amount of cornstarch is smaller to make a softer cream, like a sauce).
- Serve the rolls warm or cold on 2-3 tablespoons of vanilla sauce. Dust with powdered sugar.
