Grandma's Chips
Lacto-Ovo Vegetarian Recipes Romanian Snacks
I know something better than homemade noodles! The chips my grandmother used to make from the leftover ends of noodle dough. She would unfold them and bake them directly on the stove plate. Oh my, what a treat!!! I watched fascinated as the dough placed on the plate started making little bubbles that appeared one after another pop-pop-pop... and then they started to smell amazing as they browned.

How to prepare grandma's chips
- Prepare a noodle dough following the recipe here (from one egg and 100 g flour you will get a plate of chips). Roll out the sheets and dry them exactly like for noodles.
- Cut the sheets into pieces that fit in the pan you use for frying them.
- Heat a pan well (preferably cast iron - my grandmother's stove plate was also cast iron). Set heat to medium-low.
- Cook the dough pieces about 1 minute per side. After placing them in the pan, you will see small bubbles appearing all over the surface. Do not prick them with a fork, let them puff up. When you flip them, all the bubbles will be golden. Let them cook for another minute on the other side to dry well.
- They are good immediately, but they stay crispy the next day too.
