Recipe: Grilled Asparagus with Sesame

The time is near! For what? Asparagus season. May and June are the months for asparagus.

This is a delicious way to prepare young asparagus (the kind that is as thin as your pinky finger and has a bright green color). Not because thin asparagus is necessarily tastier than thick asparagus, but because it cooks faster on the grill. I prefer to roast the thicker ones in the oven.

You can also prepare this on a charcoal grill - in that case, just skewer several asparagus pieces on two skewers each so they do not fall through the grill grates and are easier to turn. It can be served alongside teriyaki chicken, salmon patties, or a poached egg. If you have leftover grilled asparagus, which I doubt, you can use it in this frittata (just skip step 3 since the asparagus is already cooked).

Ingredients

1 bunch of young asparagus (about 15-20 spears)
1 tablespoon oil
1 tablespoon soy sauce (low sodium)
1/4 teaspoon sesame oil
1 clove garlic
1 level tablespoon sesame seeds
black pepper, sea salt

How to prepare grilled asparagus with sesame

  1. Cut off the woody bottom part of the asparagus. If it is truly young, it will not have this, but check anyway.
  2. On a wide platter, mix the soy sauce with the oil, sesame oil, and crushed garlic. Grind some black pepper. Toss the asparagus in this marinade and let it sit while you complete the remaining steps.
  3. In a small pan, without any added fat, toast the sesame seeds until they take on a light color.
  4. Heat the grill pan over high heat for 5 minutes.
  5. Place the asparagus on the pan and cook for 8-10 minutes, turning them during this time so they cook evenly all around. The asparagus will develop light grill marks.
  6. Transfer the asparagus to a plate and sprinkle with sesame seeds and sea salt. Serve immediately.
