Grilled Halloumi with Peppers and Cherry Tomatoes

Something quick for the weekend, so you don't spend too long in the kitchen: halloumi with a Mediterranean stir-fry. The cheese can be replaced with a grilled white fish fillet - the sauce pairs very well with fish too. And if you don't like mint or basil, it's also good without them.
Ingredients
200 g halloumi cheese
3 small kapia peppers (about 200 g total)
1 semi-hot Bulgarian pepper (or another hot pepper)
1 large garlic clove
200 g cherry tomatoes
1 generous teaspoon capers (in vinegar)
10 green olives
4 parsley sprigs
1 small mint sprig (about 10 leaves; or a few basil leaves)
3 tablespoons extra virgin olive oil
salt, black pepper

How to prepare grilled halloumi with peppers and cherry tomatoes
- Cut the peppers into squares (see here how to cut peppers into squares). Cut the tomatoes in half or quarters, depending on size. Crush the garlic. Chop the herbs.
- In a wide pan (or even a wok), heat 1 tablespoon of oil. Add the peppers and sauté, stirring occasionally, until browned in spots. Keep the heat on medium-high so the peppers cook quickly. It takes about 5 minutes for small kapia peppers. Adjust the time if using larger peppers with thicker skin.
- Reduce heat. Add the tomatoes, garlic, capers, olives, herbs and 2 more tablespoons of oil. Sprinkle with a little salt and pepper. Leave on heat just until you see the tomato skins start to wrinkle a bit (about 2 minutes).
- Remove the pan from heat and cover until you prepare the cheese. The tomatoes will release more juice and a sauce will form on the bottom of the pan.
- Heat a grill pan (or cast iron pan) for 5 minutes over high heat. Cut the cheese into 4 slices and place on the grill. Grill for 1 minute on each side (until you have nice grill marks).
- Transfer the cheese to two plates. Place half of the vegetables with sauce on top. The sauce is also good reheated or at room temperature, but the cheese is best prepared just before serving.
