Radicchio Salad with Grilled Cheese

The salad is inspired by the same Judy Rodgers. I think I've developed an obsession with her recipes.
Ingredients
4 slices grilling cheese (Halloumi type)
1 large head radicchio
2 hard-boiled eggs
1 tablespoon grated Parmesan
3-4 slices day-old bread
1 tablespoon oil
salt, pepper
Dressing
2 anchovy fillets (in oil)
4 tablespoons olive oil
1-2 tablespoons lemon juice
1/2 small red onion
salt

How to prepare radicchio salad with grilled cheese
- Prepare the croutons: Cut the bread into cubes. Heat 1 tablespoon of oil in a pan and add the bread cubes. Stir quickly so the bread absorbs the oil and season with salt and pepper. Keep on heat, stirring often until the bread becomes lightly golden and crispy (about 2 minutes).
- Prepare the dressing: Crush the anchovy fillets until they become a paste, then add the oil one tablespoon at a time until incorporated. Add the lemon juice and mix well. Add the onion chopped as finely as possible, plus a pinch of salt.
- Peel the eggs and cut them in half. Remove the yolks. Chop the whites into small cubes.
- Cut the radicchio in half and then into not-too-thin strips.
- In a bowl, combine the radicchio, chopped egg whites and croutons. Pour the dressing over them and sprinkle with Parmesan. Toss gently until the dressing is distributed over the salad.
- "Sieve" the egg yolks over the top: put them in a fine sieve and rub with a spoon so the yolk falls nicely over the salad.
- Heat the grill pan well. Place the cheese slices in it and grill for 2 minutes on each side. The cheese will soften slightly but won't melt in the pan and will get beautiful grill marks.
- Place the cheese over the salad and serve.
