Recipe: Homemade Marshmallows

Fluffy egg foam candies that melt in your mouth.
The recipe itself is simple, you just need a bit of practice for the sugar syrup which you shouldn't let thicken too much on the heat.

Ingredients

3 egg whites at room temperature
250g sugar
100ml water
1 packet unflavored gelatin (10g)
1 vanilla extract
1 pinch of salt
50g cornstarch
50g vanilla powdered sugar

How to prepare homemade marshmallows

  1. Put the egg whites in the mixer and beat until stiff peaks form, about 8 minutes.
  2. While the egg whites are beating, boil 80ml water with the sugar and boil for about 6-8 minutes until you get a thick syrup. If you run a cold spoon through the syrup and swipe your finger on the back of the spoon, a clean trail should remain and the syrup should feel sticky.
  3. With the mixer running, add the vanilla extract, salt, and gelatin quickly dissolved in the remaining water to the foam.
  4. Keep the mixer running and slowly add the hot syrup. Let everything mix until the foam cools down, about 15 minutes. You will get a dense, glossy foam.
  5. Mix the powdered sugar with the cornstarch.
  6. Prepare a tray with parchment paper on the bottom and sprinkle a generous layer (about 2 tablespoons) of the sugar and starch mixture.
  7. Pour the resulting foam into the tray, shake the tray to level it and leave at room temperature for about 12 hours (overnight).
  8. The next day, place a large piece of parchment paper on the table. Sprinkle 2 tablespoons of the sugar and starch mixture. Turn the foam out of the tray onto it and gently peel off the parchment paper from it.
  9. With a very sharp knife constantly dipped in water, cut slices from the foam and then cut each slice into cubes.
  10. Put the cubes in a bowl with the rest of the sugar mixed with starch, shake the bowl well to coat all the candies.
  11. Put the candies in a sieve and shake off the excess sugar.
  12. Store in a closed container in the refrigerator. Serve plain or with chocolate syrup.
