Recipe: How to Make Mayonnaise

Mayonnaise is very easy to make at home. If you didn't know how or were afraid to try, now you can give it a chance - follow the instructions below and I think you'll never buy ready-made mayonnaise again!

Ingredients

1 raw egg yolk (or 1 raw yolk + 1 cooked yolk)
1 teaspoon mustard
250ml oil
salt, lemon juice

How to prepare how to make mayonnaise

  1. Put the raw egg yolk in a bowl. For beginners, it's easier to also use a cooked yolk, as it reduces the risk of the mayonnaise "breaking."
  2. Add the mustard and mix well with a wooden spoon until homogeneous. If using a cooked yolk too, you need to mash it until completely smooth with no lumps.
  3. Start adding oil, little by little, while continuously mixing into the yolk. Drizzle the oil slowly. For beginners, it's best to put the oil in a separate container and add one teaspoon at a time. Mix well after each teaspoon until the oil is no longer visible, and only then move to the next teaspoon.
  4. When the mayonnaise starts to thicken, you can add more oil. After about 20 teaspoons of oil, you can start adding the rest by the tablespoon. Follow the same rules: stir constantly and only add the next tablespoon when the previous one is fully incorporated.
    * If at the end you feel you need more mayonnaise, you can add a tablespoon of water to thin it, then add more oil until it thickens again. This way you'll "multiply" the mayonnaise a bit.
  5. After making mayonnaise 2-3 times, you won't need to use a teaspoon and tablespoon to measure the oil anymore - you'll pour directly from the bottle because you'll be able to estimate the amount by eye.
  6. If the mayonnaise does break (the risk is higher at the beginning, before it starts to thicken), add another teaspoon of mustard to the mayonnaise and mix quickly until it comes back together.
  7. At the end, when all the oil is incorporated, add salt and optionally a drop of lemon juice.
