Recipe: Fluffy Garlic Mayonnaise

It looks like whipped cream, doesn't it? But it's garlic mayonnaise - smooth and fluffy! The best garlic sauce ever!

Ingredients

5 garlic cloves
1/4 teaspoon salt
1-2 tablespoons lemon juice
1 egg white
150 ml oil (neutral-flavored; sunflower)

How to prepare fluffy garlic mayonnaise

  1. In a mortar, crush the garlic with the salt until it becomes a paste. Add the lemon juice and pound well.
  2. Transfer to a blender (I used an immersion blender) along with the egg white. Blend well for 30 seconds.
  3. Slowly, in a thin stream, add the oil while the blender is running. You'll see it gradually gaining consistency. After adding about 100 ml of oil, stop the blender, taste the mayonnaise, and see if you need more lemon juice. I added another 1/2 tablespoon while blending.
  4. Then add 2 tablespoons of water in a thin stream while the blender is running.
  5. Add the remaining oil in a thin stream.
  6. Store in the refrigerator.
