Recipe: Green Bean Salad with Mayonnaise

Today we have green beans again - at Radu's request I made this salad that he loves. But I made a small portion; the rest I prepared sauteed like yesterday. And that is how I finished the beans from the neighbor!

Ingredients

300g yellow green beans
a few sprigs parsley
salt

Garlic Mayonnaise (Aioli)

3 cloves garlic
1 egg yolk
1 teaspoon mustard
oil (any kind - I used olive oil and a little grapeseed oil)
a little salt

How to prepare green bean salad with mayonnaise

  1. Trim the ends off the beans and boil in plenty of salted water for 30 minutes. Drain and let cool.
  2. Meanwhile, prepare the garlic mayonnaise (aioli): in a bowl, I crushed the garlic cloves and mashed them with a little salt until they became a paste. I added the egg yolk and mustard, mixed everything together, and started slowly pouring in oil, stirring constantly, until I got a mayonnaise that holds on the spoon.
    * if the mayonnaise "breaks", add about a teaspoon of mustard and stir quickly until it comes together; then continue adding oil.
  3. I cut the cooled beans into small pieces and then added about 3 tablespoons of aioli over them. I also added some chopped parsley and salt. Mixed well. Serve on bread, with tomatoes.
