A salad that if you eat every evening until Easter will get you in much-desired shape. Although with how it's snowing, we'll celebrate Christmas again. What do you say, should I give up the planned lamb recipes and prepare some with sausages and smoked meat? 😉
Ingredients
300g button mushrooms (choose smaller mushrooms)
1 small zucchini (about the size of a large carrot)
1/2 small bunch parsley
1 tablespoon grated parmesan (optional)
Dressing
juice from 1 lemon
80 ml olive oil
1 tablespoon finely chopped red onion
1 garlic clove
salt, pepper

How to prepare marinated mushroom salad
- Clean the mushrooms and remove the stems. Slice them as thin as you can. Similarly, slice the zucchini into very thin rounds. Add the chopped parsley. Mix everything together.
- In a bowl, put the oil, then slowly add the lemon juice while constantly whisking with a small whisk until the mixture becomes thick. Add the onion and crushed garlic, then salt and pepper to taste. Taste the dressing.
- Pour the dressing over the mushrooms and mix so everything is coated. Cover the bowl and refrigerate for 2-3 hours.
- Serve simply, optionally on a bed of lettuce. If desired, you can sprinkle with parmesan.
