Marinated Sardines

They are easy to prepare and just as easy to eat. I first ate marinated sardines in Croatia, I loved them and if I had known they were this easy to prepare I would have made them sooner. They are served as a cold appetizer with toasted bread and red onion.
Ingredients
500g sardines (or anchovies; or 200g sardine/anchovy fillets)
1 lemon
5 tablespoons vinegar
2 sprigs parsley
1 sprig thyme
1 red hot pepper
1 large garlic clove
sea salt, pepper
olive oil
How to prepare marinated sardines
- If the sardines are frozen, let them thaw in milk.
- Clean the sardines:
- cut off the head
- split along the belly
- grab the spine from the head end and pull toward the tail, it will come off easily with the intestines
- cut the sardine fillet in half lengthwise - Wash the sardines well and drain. Place them in a wide dish and pour the lemon juice and vinegar over them. Mix gently with your hand to cover them well and leave for 1 hour to marinate. After one hour you will see that the color of the sardine flesh has changed - it has turned white.
- Slice the garlic and hot pepper into thin slices. Chop the herbs.
- Remove the sardines from the vinegar marinade and rinse under running water. Pat dry with paper towels.
- In a bowl, arrange layers of sardines, sprinkle with salt and pepper, then garlic, herbs, pepper slices... continue until you finish the sardines. Pour olive oil to cover them. Cover the bowl with a lid or foil.
- Refrigerate for at least 1 day. Serve cold, straight from the refrigerator, on toasted bread with red onion slices.

Cover with oil
