Marinated Olives with Feta and Herbs

A few weeks ago I told you that Parmesan crackers go well on a platter with assorted cheeses and marinated olives. These are the olives I was talking about, they're more flavorful than when served plain and more colorful. I prepared them specially to serve with cheeses bought from the Brașov area.
Ingredients
100 g olives (green or black or a mix of both)
50 g feta cheese (or fresh cheese)
1 sprig rosemary
2 bay leaves
2 sprigs parsley
1/2 roasted pepper (or 2-3 sun-dried tomatoes in oil)
8 tablespoons olive oil
2 tablespoons lemon juice
10 grinds of chili (or 1 hot pepper)
How to prepare marinated olives with feta and herbs
- Roast the pepper using the technique here. Peel it and cut into strips.
- Pit the olives if necessary. My green olives were stuffed with almonds. Chop the herbs. Cut the cheese into small cubes.
- Mix all ingredients in a bowl, cover and refrigerate for a minimum of 1 day, maximum 1 week.
- Serve as an appetizer, they work well on a buffet table (you can arrange them in martini glasses).
