Open-Faced Sandwiches with Cucumber, Lovage and Onion
Lacto-Ovo Vegetarian Recipes Sandwiches
For May 1st rainy weather is forecast, even storms here in Cluj, so no outdoor barbecue. Just grilled on the pan. But if you don't want to make smoke and smell in the house, I suggest a picnic in the living room. Let's make fresh open-faced sandwiches. This weekend I actually made homemade butter (those who follow me on Instagram already know this), so everything came together wonderfully.
Ingredients
2 slices of fresh bread (for open-faced sandwiches I prefer rustic bread, for sandwiches I prefer soft white bread)
homemade butter (or quality store-bought butter; or cream cheese; or processed cheese)
1-2 small cucumbers
5 large lovage leaves
2 young green onion stalks
1/2 small red onion
a little olive oil
sea salt (fleur de sel)
How to prepare open-faced sandwiches with cucumber, lovage and onion
- Spread the bread with a generous layer of butter. Sprinkle with a little sea salt (fleur de sel).
- Peel the cucumber and cut into thinner slices. Add the finely chopped lovage and again a little sea salt.
- Arrange the cucumber slices over the butter, overlapping slightly.
- Chop the green onion into fine rounds. Cut the red onion into thin scales. Sprinkle a little salt over them too and drizzle with a little oil, just enough to give them a sheen.
- Cut the cucumber-topped bread into squares (about 6-8 pieces). Arrange on a platter. Sprinkle with green onion and then place "fringes" of red onion here and there.
* when traveling you can transform these open-faced sandwiches into sandwiches, using two thin slices of soft white bread spread with butter between which you put the cucumbers and onion
