Pasta with Wild Garlic

I could hardly wait for wild garlic to appear so I could make this pasta.
Ingredients
200g long pasta (tagliatelle)
1 generous bunch of wild garlic
40g pecorino (or other hard sheep cheese)
zest from 1/4 lime
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon butter
salt, black pepper, chili flakes

How to prepare pasta with wild garlic
- Cook the pasta in salted water according to package instructions.
- On a plate grate, using the smallest grater, the lime zest, pecorino and grind plenty of black pepper. Mix.
- When the pasta has just a little time left to cook, put the butter and oil in a large pan and heat. Add 1/8 teaspoon chili flakes and coarsely chopped wild garlic. Stir quickly, just until the wild garlic "wilts".
- Add 3 tablespoons of pasta water and bring to a boil.
- Add the drained pasta and stir until coated with the sauce from the pan.
- Add the pecorino and stir until melted. Adjust salt to taste.
- Add the lemon juice and stir.
- Serve immediately.
