Recipe: Pasta with Wild Garlic

I could hardly wait for wild garlic to appear so I could make this pasta.

Ingredients

200g long pasta (tagliatelle)
1 generous bunch of wild garlic
40g pecorino (or other hard sheep cheese)
zest from 1/4 lime
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon butter
salt, black pepper, chili flakes

Servings: 2

How to prepare pasta with wild garlic

  1. Cook the pasta in salted water according to package instructions.
  2. On a plate grate, using the smallest grater, the lime zest, pecorino and grind plenty of black pepper. Mix.
  3. When the pasta has just a little time left to cook, put the butter and oil in a large pan and heat. Add 1/8 teaspoon chili flakes and coarsely chopped wild garlic. Stir quickly, just until the wild garlic "wilts".
  4. Add 3 tablespoons of pasta water and bring to a boil.
  5. Add the drained pasta and stir until coated with the sauce from the pan.
  6. Add the pecorino and stir until melted. Adjust salt to taste.
  7. Add the lemon juice and stir.
  8. Serve immediately.
