Chickpeas with Wild Garlic and Cheese

How wonderful when cooking takes only 10 minutes! Sometimes you really don't have much more time and it's a great thing to manage to prepare something good and healthy. I see this chickpea dish - very soon!!! - in my lunch box. If you like the recipe, don't hesitate to freeze a few bunches of wild garlic now, to have it later too, when the season ends.
Ingredients
250g cooked chickpeas
1 small bunch of wild garlic
2 young green onion stalks
35g soft goat cheese (or goat/sheep feta)
3 tablespoons olive oil
salt, black pepper

How to prepare chickpeas with wild garlic and cheese
- Crumble the cheese in a bowl and mix with the onion cut into rounds and 1 tablespoon of oil.
- In a wide pan, heat 2 tablespoons of oil. Add the chickpeas (drained), sprinkle with salt, 1/4 teaspoon chili flakes and grind plenty of black pepper. Saute the chickpeas until lightly browned (about 5 minutes).
- Add the finely chopped wild garlic and saute for another 2 minutes, until it "wilts".
- Put the chickpeas in a bowl. Mix gently with the crumbled cheese from step 1. It's good warm or at room temperature. It can be a side dish (2 servings) for roast or grilled lamb chops, or a main course (1 serving) with toasted bread or crispy bread (Wasa type), optionally with a small fresh salad.
