Plums in Red Wine

Ingredients

500g plums (15 plums)
500ml red wine
70g sugar
1 cinnamon stick (about 4cm)
4 cloves
zest strips from 1/2 lemon
2 pinches ground anise
1/4 teaspoon ground fennel
1/2 teaspoon cumin seeds
1/3 tonka bean grated (or 1/4 vanilla pod)
50ml rum
2 teaspoons starch

How to prepare plums in red wine

  1. Simmer the wine with the sugar and spices until the wine reduces by half. Cover and let infuse for 15 minutes.
  2. Strain the wine and add the rum (minus 2 tablespoons). Add the plums cut in half and simmer until the plums are soft (about 10 minutes).
  3. Add the starch dissolved in cold water and simmer for 1 more minute.
  4. Remove the pot from heat, add the remaining rum. Cover and let cool.
  5. Serve with vanilla ice cream, walnut parfait, or mascarpone.
