Plums in Red Wine
Ingredients
500g plums (15 plums)
500ml red wine
70g sugar
1 cinnamon stick (about 4cm)
4 cloves
zest strips from 1/2 lemon
2 pinches ground anise
1/4 teaspoon ground fennel
1/2 teaspoon cumin seeds
1/3 tonka bean grated (or 1/4 vanilla pod)
50ml rum
2 teaspoons starch

How to prepare plums in red wine
- Simmer the wine with the sugar and spices until the wine reduces by half. Cover and let infuse for 15 minutes.
- Strain the wine and add the rum (minus 2 tablespoons). Add the plums cut in half and simmer until the plums are soft (about 10 minutes).
- Add the starch dissolved in cold water and simmer for 1 more minute.
- Remove the pot from heat, add the remaining rum. Cover and let cool.
- Serve with vanilla ice cream, walnut parfait, or mascarpone.
