Popovers are pastries baked in muffin tins. The name comes from the fact that they rise quite a lot and pop over the rim of the forms. They are very light, ideal for breakfast. They can be brushed with butter and rolled in cinnamon sugar, or they can be torn in half and spread with butter and jam, Nutella, or dulce de leche.

Ingredients
15g melted and cooled butter + 1 tablespoon melted butter for greasing the pan
2 eggs
250ml milk
1/2 teaspoon salt
125g flour
For serving
melted butter and cinnamon sugar, or
butter and jam, or
Nutella, or
dulce de leche

How to prepare popovers
- Important! All ingredients must be at room temperature.
- Mix well with a whisk the eggs, melted and cooled butter, salt, and milk.
- Add all the flour at once and mix with the whisk until there are no more large lumps of flour.
- Grease muffin tins with melted butter (don't let butter pool in the forms, but make sure they're well greased). Put the pan in the oven preheated to 200°C for 2 minutes.
- Carefully remove the hot pan and fill the forms halfway with the batter (I used a measuring cup with a spout).
- Put the pan in the oven for 40 minutes. During baking, DO NOT open the oven door!!!
- Remove the popovers from the pan - if they're stuck a bit, use a knife to help. Let them cool.
- Leave plain the ones you'll serve with butter, jam, Nutella, or dulce de leche. Tear them in half and spread with whatever you like. They're good and crispy even the next day.
The rest, immediately after they've cooled, brush well all over with a little melted butter and then roll them in sugar mixed with cinnamon. They're my favorites!
