Pork Chops in Sweet and Sour Sauce

For me, this recipe was a real challenge... because of my relationship with vinegar. But I wanted you to have as many interesting options as possible for preparing pork this month. In the end, I also gained from this experience - the sauce is very, very good and believe it or not, I wiped my plate clean at the end. I will definitely use it in other recipes too. Pork chops with sweet and sour sauce are served with a little mashed potatoes and MUST be accompanied by a large green salad.
Ingredients
4 pork chops (3 cm thick)
black pepper
a little oil
Brine
2 cups water
1 tablespoon salt
1/2 tablespoon sugar
1 teaspoon black peppercorns
1 sprig rosemary
Sweet and Sour Sauce
50 ml balsamic vinegar
2 tablespoons honey
1 green onion stalk
1 sprig rosemary
2 cloves garlic
1 tablespoon butter

How to prepare pork chops in sweet and sour sauce
- Mix the brine ingredients until the salt and sugar dissolve. Place the chops in it and refrigerate for at least 4 hours, but preferably overnight.
- Start by preparing the sauce: put the vinegar with honey, crushed garlic, onion rounds and rosemary sprig to boil (over medium heat) for 5 minutes from when it starts to simmer. Remove the sauce from heat and strain. Add pieces of butter to the strained sauce in batches, stirring until completely dissolved. Add a little salt if necessary. Let the sauce sit until the chops are ready.
- Remove the chops from the brine and pat dry thoroughly with paper towels. Season with ground black pepper and then brush both sides with oil.
- Heat a grill pan for 5 minutes. Place the chops in it and fry for 2 minutes on the first side and 1.5 minutes on the second side.
- Remove the pan from heat, quickly brush the chops with sauce on both sides and place them back in the pan. Put in the oven preheated to 200°C for another 3 minutes.
- Remove the chops from the oven, transfer to a warm plate and let rest for at least 3 minutes.
- Serve the chops generously drizzled with sauce.
