Recipe: Rabbit Stew with Olives

My favorite meat is rabbit... This is a simple recipe for preparing it.

Ingredients

700g rabbit meat (1/2 rabbit)
1 can (400g) tomatoes
1 onion
3 garlic cloves
thyme
2 bay leaves
salt
pepper
2 tablespoons oil
1 handful black olives

Servings: 3

How to prepare rabbit stew with olives

  1. Heat the oil in a pot and brown the meat pieces on both sides, about 2-3 minutes per side.
  2. Remove the meat from the pot and add the chopped onion, cooking until slightly softened.
  3. Add the crushed garlic, tomatoes with their juice, bay leaves, and season everything with salt, pepper, and thyme. Place the meat pieces in the sauce and add about 100ml of water.
  4. Let everything simmer over medium heat, covered, for 40 minutes.
  5. Add the olives (pitted if desired) and simmer for another 5 minutes uncovered. Serve with rice or mashed potatoes.
