Chicken with Mushrooms and Herbs de Provence
Chicken Vegetables Meat Dishes Mushrooms
It's a recipe with simple ingredients, but the Herbs de Provence give it a special aroma.
Ingredients
500g chicken meat
1 tablespoon Herbs de Provence
2 medium carrots
300g mushrooms
2 very ripe tomatoes (or 2 teaspoons tomato paste)
a few sprigs of parsley
salt, pepper
4 tablespoons olive oil
How to prepare chicken with mushrooms and herbs de provence
- Cut the chicken into medium pieces. I used 6 boneless, skinless chicken thighs which I cut in half, but you can use any part of the chicken. Fry until golden on both sides in oil.
- Add 3 cups of water, the carrots cut into rounds, and the Herbs de Provence. Season with salt and pepper to taste. Let it simmer until the meat is done, about 30-40 minutes.
- Add the tomatoes, peeled and puréed in a food processor (or grate them; or substitute with tomato paste). Let it simmer for another 10 minutes.
- Add the mushrooms (whole if small, otherwise slice them) and chopped parsley, and simmer for 10 more minutes.
