Quick Homemade Ketchup

Quick ketchup, made at home. If you didn't manage to make homemade ketchup this summer, use this very simple and fast version with canned tomatoes. Here's a serving suggestion.
Ingredients
1 can of tomatoes (450 g)
1/2 onion
1 level tablespoon tomato paste
50 ml sherry vinegar (or 35 ml red wine vinegar)
50 g sugar (can be brown)
1/2 teaspoon sweet paprika (and a little hot paprika if you want spicy ketchup)
1/4 teaspoon Chinese five-spice powder
2 tablespoons oil
salt
Yield: 1 small jar of 150 ml
How to prepare quick homemade ketchup
- In hot oil, sauté the chopped onion until very soft (about 5 minutes).
- While the onion is cooking, boil the vinegar with the sugar over low heat until the sugar is completely dissolved, then continue for 2-3 more minutes.
- To the sautéed onion, add the canned tomatoes (with all their juice) blended in a blender, paprika, Chinese five-spice, and the boiled vinegar with sugar. Add salt to taste.
- Simmer over medium heat for 10 minutes until the sauce reduces a bit.
- Pass the sauce through a fine sieve. Return it to the pot along with the tomato paste and simmer for 5 more minutes over low heat until it thickens. Taste for salt.
- Let it cool, then store in the refrigerator.
